Amazingly all on the same weekend! They will all get the same breakfast. The other rooms are traveling together, thus eating at the same time, so they will get the regular breakfast.
 
Ah, now that they have all checked in and asked for suggestions for dinner and I have said there's not much in town that is totally vegan I find out that they are 'flexible' when they dine out. Not here. But they don't push it at restaurants.
After we have planned an entirely vegan breakfast.
 
I gave my vegan baked oatmeal. He was here when I also had a GF. It was Thanksgiving morning and I was not fussing with anything other than the dinner. The baked oatmeal VEGAN is all water instead of milk, I use applesauce instead of butter already, and 2 tablespoons of water for every egg. Everyone was happy with it. The regular people got vanilla yougurt with it and the vegan got it plain (there were blueberries, red raspberries, blackberries, and dark cherries on top (after it was flipped out of pan) and chopped dates in the oatmeal.
 
we had a vegan chap here for a nursing conference 5 days but he had fried mushrooms, tomato, fried bread, toast with vegan spread, fruit, beans and tea with no milk - which isn't too bad - plus came down straight away at 7.30 so his breakfast was always first.

We did a vegan oatmeal bake also. Bananas instead of eggs, soy milk instead of milk, applesauce instead of butter. Came out pretty good and even the regular folks said it was a keeper. Even I ate it.
Next time we do it, tho we'll serve it in individual ramekins. It was a bit sloppy on the plate and it looked like stuffing. Not pretty.
And, of course, I asked what they had for dinner...

I made a vegan French toast that used most of those substitute ingredients and was very good. (Finding a bread that was totally vegan was the challenge here, but since then we have gotten more options in our largest grocery store chain now.)
I kept "Buttery Sticks" on hand in the freezer for vegans as a butter substitute. A vegan guest turned me on to it and it tastes pretty good.
Tofu and veggie frittata was another go to recipe for the vegans as I could do the regular frittata for everyone else and serve that, so it almost looked like everyone was getting the same thing. HA!
