There were four really ripe bananas just screaming to be made into banana bread ... so I made up six mini loaves. Just for fun, I tossed chocolate morsels in one pan, blueberries in another, blueberries, craisins and chocolate morsels in another, and i THINK the rest are the standard world famous BEST BANANA BREAD EVER. But I'm not sure! Because as they baked, the added yummies sank into the bread and all look very much the same now that they are done.
Note to self: Next time, mark each kind with popcycle sticks or something! Have now served 'mystery banana bread' to the housemates.

You can stop fruits, etc. from sinking by tossing them with a bit of flour - just enough to coat - before you mix them in.
 
When we have an overabundance of bananas DH tosses them in the freezer (in peel). When I want to make banana muffins I can peel easily with slitting the peel and they are easy to mash. No defrost needed.
 
yes, i tossed lightly with flour before 'tossing' them in the batters. but they still sank just below the surface as the loaves bake with a mounded crust on top (yummy good) and it's hard (impossible) to tell what is in each loaf. but it's fun and they are all good.
