I made this this weekend, and it was simply delicious. If you have TJ near you, they sell speculoos spread as cookie butter. And apparently Smallmart carries the Biscoff cookies and spread as well.

I still have some and I'm just noshing on it. It's wonderful. If only speculoos was easier to get in this country as it is in the US.
 
I will not, I repeat will not let our youngest see this, she is a Biscoff head! And yes, Smallmart/Stuff Mart does carry it, right next to the peanut butter.
(Why not show her, because she would force me to make this! She is crazy for the stuff)

And this recipe is so delicious... in fact, I'm heading for the kitchen to get myself a piece....

Speculoos is an European cookie which resembles the gingerbread, but slightly different spices that includes white pepper. In the US, Lotus the manufacturer decided to call them Biscoff for some odd reason. A few years ago in a contest, someone came up with a recipe which made a spread out of speculoos cookies and well... that's the essential competitor to Nutellllllllla. TraderJ sells their version as "cookie butter" and this year started selling a crunchy version too. In some areas, the closest cookie is the windmill cookie by Voortmannnnnn.

I've seen that sold here in a couple of stores.
uh-oh...I would have to stay away from it if it tastes more like the windmill cookies!!
