Gluten Free... the Fad and the Waste...

I saw this article http://www.scientificamerican.com/article.cfm?id=most-people-shouldnt-eat-gluten-free and thought that it was quite important to read.

Anecdotally, the question is, is cooking, looking at packaging and being careful about what you eat what is actually healthy versus the specific of it being gluten.... Unless you are a Coeliac, how many people are being so careful as to really be 100% GF. How many know that they can't eat bleu cheeses? Instant coffee? Mustard? Malt vinegar? White pepper? And so many more foods. Even some toothpastes, shampoos and lipsticks.

We get a lot of 'well, I try...'. And definitely they are trying at times. Technically, a real celiac should not eat anything from my kitchen. I can no way guarantee that there are no 'wheat germs' floating around.
