I freely admit that cooking is a skill I had to acquire when I opened the B&B. I have a small, but growing repertoire of breakfast recipes I can now make. Within the past year I have added lemon ricotta pancakes. After making them from scratch several times, I decided they were too wimpy, i.e. too cheesy and not pancakey enough.
So, today I tried another way. I used AJ pancake mix. I use the measurements for 1 cup of the dry mix, so that means combining one egg, the oil, 1/2 c ricotta, and just a little more than 3/4 c milk. Instead of lemon juice, I use packets of True Lemon crystals. Each packet = 1 wedge of lemon juice, so I used 8 packets. ( I'm always throwing out 1/2 lemon when I buy the real fruit instead). After combining all of the above in one bowl, I add all to 1 c of dry mix. They cook with a nice uniform brown and I can taste the cheese and the lemon.
They are served with red raspberry syrup ( I now water down and heat the jam to make the syrup) underneath and lemon curd on top. Maple syrup is available but not necessary.
Another modification is to make pecan pancakes by using the same basic box mix and adding 1/2 to 3/4 cup cooked steel cut oatmeal to the wet ingredients, and adding 1/2 tsp cinnamon, a tsp of brown sugar, plus a handful of pecan pieces to the dry mix. If I'm in the mood I might use 2 eggs instead of just one, especially if I'm using a heaping cup of the dry mix.
Chocolate pancakes? Make with chocolate milk, add mini chocolate chips.
And, early on I learned from another Innmate, add blueberries to the batter after it's on the griddle to keep the batter from turning blue.
 
Did you try Bobby Flay's lemon ricotta pancake recipe? They are lighter and not as dense as regular pancakes but that's by design. The first time I made them I was surprised that they were unlike regular pancakes and worried I'd done something wrong, but the taste is heavenly. I serve them with my homemade blueberry sauce and they are a guest favorite - they rave about how light they are, unlike regular pancakes. Did your guests like the lighter version?

The more times I dined on the left overs the less I liked them.
 
I wish there was a smiley face feature on this website. I'd "like" the chocolate pancakes (???) and agree that the more I eat my own breakfasts, the less appealing they become. The lemon pancakes sound interesting. I tried latkes while on vacation and I may soon add that to my repertoire. I've got to start making new recipes so the leftovers don't go to waste. Presently they go to our pups in the form of treats.

On my pancakes, they tend to be a bit shiny and make a noise when I tap them with a fork. If I cover them with a towel to keep them warm for a few minutes, they seem more tender.

Bourbon!! I did not know this. Did you? Talking with my sister the other day. She had tried out a new recipe. It was salmon that was in a marinate for a couple of days. The marinate had bourbon and other goodies in it. It went in the oven with the marinate at 425 for however long. She luckily was in the kitchen when the oven caught on fire from the bourbon. The recipe had not said to drain the marinate off before baking. Still learning after many years of cooking.
