Hey I do this ! Started this last year. Serve it with Maple syrup and cinnamon pecan with a small dish of whipped cream on the side. Also apple sausage.
here is how I do it just my regular pancake mix. I dip apple slices into it. I found by cutting slices then lay on paper towel and run a wee bit of 7 up brushed on tops so it won't go brown. Put pancake mix on flat iron and then add my apple slices that has been dipped in mix. Might have to add a wee bit of pancake mix on top. Just make sure apple slices are covered well. It takes a bit longer to cook.
PS don't make your apple slices to thick
