What kind of non dairy milk do you like? What kind seems to get the least resistance from guests who don't want dairy?
I was avoiding almond because of the drought. But other than soy I don't drink the stuff. No idea what has a good flavor.
 
Almond here. Seems the best tasting and the leftovers are easy to incorporate into baked goods.
 
We use soy (has more body for the coffee), almond and rice.
 
keep in mind, that these commercial non-dairy milks are really not all that good for you. I saw several stories about what was really in almond or other nut milks. There is not that much nut and they are pricey. The rest is water, fillers and vitamin/mineral supplement. There is maybe 50 cents worth of almonds in a half gallon.
You can easily make your own nut milk (almond, cashew, etc.), on demand. And homemade always goes over well. There are plenty of recipes on the web, and Youtube videos. A touch of cinnamon/nutmeg never hurts. You can blend with some berries, peaches, etc. for a kick.

Almond Breeze. Their half almond/half coconut unsweetened vanilla is delicious on cereal and as a french toast batter with eggs. Shelf stable for many months too and for about 10 days in the fridge once opened. Very low calorie and low carb. Also awesome in smoothies.

Not so easy for us ... if you have a recipe that works, that tastes like something, not white water, without coming out like glop or with bits of glop in it, not the consistency of a smoothie but of milk, please share.

I have made good nut milks in the past.
The processed kinds use thickeners, such as carrageenan.
A rapid simple way I found to make nondairy milk, is a can of coconut milk thinned with water. How thick or thin is up to you.
 
Just remembered another breakfast story. Guest asks what we are serving. Doesn't want that so says, "I'll just have..." and rattles off stuff we don't even serve and is astonished we don't have it 'in the back'.

I take breakfast requests. They are $50. So far, no one's tried it.

Yessir. We are expecting to have armadillo and squid beaks in stock for our 150th anniversary...
