My Elopement couple is in and waiting for the second room to arrive (they DID call to say they had been caught in traffic- told them to get supper on the way in).
When the second room booked, I let them know we had a wedding happening Saturday - so they are aware. When making the reservation, the woman tells me her birthday is Monday and asks if I make cheesecake. I told her that was above my pay grade. Suggested a bakery in the area - do not know if they make them or not (and I really did not search). Last night I saw a post on FB for a ricotta cheesecake that was supposed to be "light". I printed it off and decided to try it. I was hoping it would be like a cheesecake I used to get in Columbus at a restaurant out on Broadway (way east) called Eli's. When I tried to take the family there, it was gone. In 1968-69 I actually paid $1.25 for a slice of it, even going so far as to drive from Grove City (for EN) to get it. That was a LOT of money for me then.
I made 2 small pans of it. Disappointing but I think I may try again and next time I will whip the ricotta. This one is a little grainy - has vanilla wafer crust lemon cheesecake. Well, I tried. Still trying to decide if I am going to give it to them or not. May put a candle in it Sunday morning to show I tried.
 
If you want, you can make the nicest little mini cheesecakes for them. I can put the recipe in the recipe category if it's not there .. 16 ounces cream cheese, 3/4 cup sugar, 1 tsp vanilla, 2 eggs, vanilla wafers or you can make a little graham cracker crust to use ... and cherry pie filling or blueberry pie filling for topping if you like that or something of your own like a sliced strawberry.
So so easy ... you put them in little cupcake paper cups (I used the tiniest ones) enough graham cracker crust 'dough' or one wafer in each paper. Soften the cream cheese, blend well with sugar, vanilla and eggs, then whip til light and fluffy ... put batter in each paper, put papers in muffin tins, bake 350 15 minutes cool and top Keep refrigerated. (Do stop and soften the cream cheese before making this so you don't have little lumps of cold cream cheese) I've been making these for years - they look so fancy and come together like nothing.

You can always chunk up the mistakes and put them in a footed bowl with a strawberry sauce over them. Serve them as a starter.
But, then again, pretty brassy for someone to suggest you make such an expensive item just for her.

I cut strawberries into heart shapes and served the minis for Valentine's day.

They seem to be very nice. Yes, the ricotta was a bit over $7 and it took 6 eggs, but I am glad I tried it. I am going to do a half recipe next time and see if beating it makes a difference - just for the heck of it. I don't think she actually thought about how expensive it would be to make it - I do not think she ever made one. AND I would not have done it if not for seeing that recipe last night.
Everyone has a 9 AM breakfast which will work nicely for me. I can get it on the table, leave them to chatting while I go get the flowers. I will deal with the Chapel for Sunday breakfast and do the bread etc Sunday. Tomorrow I am doing the easy route, baked oatmeal. And since I bagged up the muffins this morning, they will be moist enough to recycle for tomorrow (banana muffins with Hersey kiss centers are moist). The wedding is at 2.

Ricotta is grainy. Beating it more won't help. I did a ricotta mousse once for our guests and it did not go over well. Texture was the problem.
