I might use blueberries that had been put out for cereal in the next morning's pancakes. But pretty much, if it was out already, it doesn't go out again. Do you ever use leftovers? Like bacon crumbled into the next day's quiche? Or leftover sausage into the next day's omlettes?
What do you do with leftover fruit? Does the bread go to the birds? Or the kids? Do you eat what's leftover? Or just toss it?
 
Do you mean uneaten fruit or fruit that you didn't plate? We don't throw anything away, that is ours. If the guests do not eat it then it is thrown away, per our health department rules.
 
If it's something we have prepared and served, like pancakes, it goes in the trash if someone doesn't eat it. Muffins go back a day or two later, or may get crumbled into something else. We don't do buffet style, so we keep what we don't serve.
We also wash all the cutlery, even if they didn't use it, just in case they did and we didn't see or can't tell.

The only leftovers we generally have are bacon (we make that in advance) or quiche. We eat both.
We plate and serve so if it goes to the table and the guest doesn't immediately wave it away it goes in the trash later on.

Put the coffee cake out for snack later in the day.
I do that with snacks that don't get eaten. They go back in the fridge and come out a day later.

I make mini-muffins planning on having extra. I offer "care packages" of muffins to go. Most love it. A bonus they did not pay for. (and something that does not hit my saddlebags aka thighs) I have wrapped a couple pieces of coffee cake - but the one I make happens to be a favorite of MINE.
I serve family style to cut down on waste. All leftovers go into the garbage disposal (aka waist).
Leftover fruit could be recycled into smoothies.
 
One of my jokes with the guests is when they ask if I get to eat any of Shelley's breakfast, I always say, "That depends on how much you leave on your plate." One person didn't get that, I had to explain that I was only kidding. It should be obvious that I do get to eat a full breakfast.
Anyway....
Shelley has one of those vacuum seal machines. We will freeze a few things, like the homemade pancakes and homemade biscuits. Some of her casseroles stay really well in the fridge too. If we have a mid-week couple, we might warm those up for them. We definitely try them first to see if they are of the same quality, but they usually are still really tasty.
We also take leftovers to local business owners and musicians so they can tell people who might ask them about a local B&B. They can say they've tried some of our breakfast stuff and it's delicious!
Except for the Italian Breakfast Casserole. That's not getting away.

Egg dishes shouldn't be kept even in fridge for more then 24 hours and then that is even iffy. Just sayin.
 
We do buffet style. Everything is either eaten by us or recycled. Nothing is wasted, only waisted! All milk products goes into making homemade yogurt. As soon as the Dining Room door is closed, we start calling our bids for leftovers. (first one to call, gets it) We are well aware of what is sitting on the side tables, how much of it...
 
Since we deliver breakfast, I only cook the exact amount going out to the rooms. If something comes back from the rooms, it's trashed. If it's a pastry (bread, muffins), the birds get it. If it's fruit, we feed the horses across the road. Not much waste.

Even cooked? We'll eat the leftover quiche for several days.
 
Things like fruit and bread rolls we use.
Anything else goes to the chickens. This mornings breakfast scraps go in one end and tomorrow mornings breakfasts come out the other, what a brilliant invention.

Obviously we save nothing plated.
Bacon = BLTs for lunch.
French Toast is great saved in ziplock bags. For a quick breakfast, you can pop one in the toaster and you're off.
Spinach Frittata is great reheated and keeps us from falling victim to "innkeeper carb spread"
Coffee is kept in the airpot during the day in the living room for the all-day caffeine addicts.
 
The fact that we do several overnight dishes, the leftovers go to an 89 year old lady across the street who live on her own and gets up around the time that we have finished serving Breakfast. Sometimes the leftover fruit salad will go into a mixture of fruit for our Belgian Waffles. Left over meat goes into the Husband's stomach.

I'm sure your neighbor loves you!!!!! Thanks for checking up and making sure an elderly person eats at least once a day! When I was a child, my mom and us children went and had lunch with our elderly neighbor ever week day. The neighbor's daughter paid for the food, etc. so she could have peace that her mom was being checked in on while she was working.
 
We plate and serve two courses to each table. I only make enough for the guests that day so there isn't any waste. In fact, guests last week who wanted to get our early fibbed and told us that they had a train first thing in the morning so we'd make them a full breakfast early. Hubby told them that for those guests leaving early for trains, we provide my homemade scones and to go cups and he'd leave those out for them. They showed up for breakfast and said they "found some time" to stay. I had made exactly enough cheese blintzes for each person to have three. So they got the fruit course only. They were around until 9:30 and when Hubby asked what time their train was they said it was for 10:30. Shouldn't have fibbed because I don't make extra if you tell me you're not coming.
If someone turns down something and it comes back in, we might eat it ourselves. Extra waffle batter is made and frozen for my son. Anything coming back from a guest table of course is scrapped - once it leaves our view, we trash it. I could never do a buffet because I cannot stand waste.

We do a buffet for larger crowds because it is easier for people to pick what they want rather than leaving stuff they don't. It's also easier when Shelley is there by herself. We see more empty plates rather than wasting what they leave on a served plate. What's left over on the buffet feeds musicians, neighbors, our helper, my son, me or Shelley, usually within a day or two.
Just another school of thought.
