I had time to play in the kitchen and tried and failed at two recipes.
Mort, I tried the cinnamon swirl pancakes. They looked terrible so I made regular pancakes for the guests, then tried again. I remember you said it took some practice. The second batch came out better, but still, not something I'd serve. You must have a steady hand. What's the secret?
Then I tried the fried banana with honey recipe I'd posted here last week under the yucky fruit conversation. They came out fine, but I didn't think they were worth the trouble. Hubby put them on his peanut butter sandwich and they were good. I thought they would be very good in oatmeal. But a lot of work for little reward, in my opinion.
It was fun to play, though. I will keep trying new things over the winter to get ready for the season.

Did the swirl spread out a lot when you put it in the pancakes? If yes, put the cinnamon mixture in the fridge until you need it. Also, maybe the tip is too big on the condiment bottle.
Slow and steady on the swirl. Pancakes should be almost ready to flip.
We make our pancakes bigger than I think you do. More surface area to work with.
The flip has to be near perfect. If the pancake slips it smears the swirl.

hmmmm, there was slipping. I can see that. Also, I did figure out that I needed to wait until they were almost cooked through. And yes, I had trouble with consistency. It was either too hot and runny, or too cold and stuck.

Keep in the fridge until you're almost ready to use it. If it's too thick roll the bottle around in your hands.
They never come out perfect here. I would like them to have a more defined swirl after cooking. The flip really is important. So hard to do when there are 8 pancakes on the griddle.
We stack the pancakes so the really ugly ones go on the bottom. ;-)

I had to put the bottle in hot water because the butter kept getting stuck in the bottle cap. Now you are making me want to try it again. :)
They tasted fantastic!
