DH is on a no salt diet. This is generally not as difficult as might be - because we use few processed foods to begin with. I bought a Cuisinart food processor at Christmastime and just made peanut butter. No salt of course. It took 5 minutes and was a hoot to watch the nuts turn to butter. And - yum.
Why did I wait so long to get one of these things?
Made old-fashioned ladies tea chicken salad last week. A marvel how fast that was too. My knife skills aren't bad but this machine rocks.
 
I bought my husband a peanut butter maker for Christmas (and even though it is obvious the gift benefits us both).... OMG, cashew butter is SOOOO good! We add a little salt and a little coconut oil.

Up to now I would have considered myself a minimalist as far as gadgets go, but with a blender, mixer and food processor on the counter now - those minimalist days are gone!

I have a 14 cup processor, so likely up to three pounds would fit. I used one and one quarter pounds. Since peanuts are the only ingredient measuring was not required. Most online advice says to keep in cupboard like store-bought because it goes so quickly. Others say keep in fridge for more dense consistency and longer keeping. None say how long, but eventually it would go rancid if not used. Most recipes call for dry roasted unsalted then add a bit of kosher salt. I used unsalted roasted (not dry roasted) from the bulk bin, so a bit of oil showed on the outside. Some recipes also say to roast your own for the degree of roasted flavor you want, then to process while still warm. I just dumped 'em in. This is a 1300 watt processor and the butter was done in 5 min. There are photos on the web of the various stages in the process so I knew what to expect.

For last night's dinner I made peanut sauce chicken and saag made with chard instead of spinach. Pureed the chard. If I have time today I'll try some dough. Haven't done that yet. I make bread dough in too large quantities for the processor, but dough for a single pie might be faster than by hand. Playing with this thing is still in the fun stage.
