tried plating the breakfast

we only had one couple over the weekend. (As you might know) we generally toss out the breakfast in a buffet and then relax with a cup of coffee for 5 or 10 minutes.
Because we only had one couple, we asked them what they liked and they asked for scrambled for one and fried for the other. They did not want sweets.
We plated three scrambled and three fried eggs each with fried potatoes and 4 pieces of bacon. We had a small disagreement with whether it was homey and generous or an insult to offer such full plates.
They ate every bite. Every bite. Clean plate club. Plus fruit and juice. I guess it was homey and generous.
 
that's three eggs on each plate, not 6 eggs on each plate. LOL. Grammar and punctuation are our friends.
 
Two eggs here, in whatever I make. We sometimes get "can't eat it all" - other times the they-must-have-licked-the-plate people. I will continue to err on the side of generosity unless a multi night says too much on their first breakfast, then a suggested smaller portion breakfast with follow through the next day. I like making one-egg omlettes.
My own favorite breakfast is a poached egg on toast. The bread has to be good bread though.
 
We also put out two large muffins which they didn't touch. I remembered lessons I'd learned here and gave them the Morticia treatment. I packed the two muffins in a paper bag and wrote,"Hope to see you again soon!" on it and handed it to them. They were thrilled.
 
That's a lot more than we plate, but it worked for you! Yippee!
 
You can make less look like more by using luncheon plates rather than dinner plates.
I do not plate but I use 3 eggs per person + 1 when making the egg bake and 4 slices of bacon per person. I do not usually do potatoes, but I do one 3x5 loaf of bread per person instead of toast. I think you did a perfect serving.

He's doing it again today without me there. They don't eat bacon, so he is offering a choice of eggs or pancakes and will plate just the one choice on a small plate.
This is a walkin! In February. There is a bird watching group in town and these two found our cheap room on line and booked on the fly. (Had to run to the store last night for fresh fruit.)

If not bacon is it meat or pork they don't want? Or the salt or calories! We keep a couple of different kinds of non pork, non meat sausage patties in the freezer.

It's bird week in Gloucester, MA. We had a whole group last year, but this year, we only have two open rooms so we didn't participate. Nice that they found us.
I do stock chicken sausage, but I don't think he even asked.
