I just reviewed this recipe that's on our little website here. I know the innkeeper so I'm not trying to be disparaging or anything. However I do find it kind of funny that the recipe calls for a whole vanilla bean and then gives an option for a different kind of rice to use since 'Aborio can be expensive.' Have you ever priced a whole vanilla bean?!?!?! At least she advocates re-using it.
Regardless, I might just try this recipe as I really like rice pudding
 
I read that one, too. I've never had rice pudding so not sure if I'd like it.
She did say to use the bean casing to flavor sugar, so two for one.
 
You can just substitute vanilla essence... 1 tsp per bean, aprox.

Not to mention: Figs, dates, dried apricots and dried cherries.

I have never even heard of river rice. I would like to try it though. Not sure rice pudding is a breakfast dish, but I would enjoy some right now!

No it is not cheap but you can use other rice than arborio. I always used my vanilla beans twice by drying and then putting in a closed container of sugar. Great to have vanilla sugar around
