Trying to liven up the fruit course tomorrow. Anything I can mix up to pour over cantaloupe and pineapple?
 
There's 2 things I do. I buy lemon curd at Trader Joe's and melt in the microwave, then drizzle it over fresh fruit.
No don't laugh! Try it before you discount it. So simple. Sour cream mixed with brown sugar. You need to add quite a bit of brown sugar so you can't really tell it's sour cream. Don't stir it too much or it gets very thin. The brown sugar will dissolve after a few minutes.

Another good idea. I'll have to look for coconut milk at the store.
 
Lime-ginger syrup - lime juice (4 or 5 limes), grated ginger (fresh if you have it), sugar and water (1/3 sugar, 2/3 water) - it's a thin syrup so good for tossing fruit it. Grate a little lime zest on top if you want.

And I have limes and candied ginger on hand. Another good one.
 
Another I used to do is a simple syrup with vanilla bean steeped in it.marinate the fruit in it overnight. This is how I fail as able to eat grapefruit segments

Yes, chopped candied ginger would be good. Nuke it all for a few minutes to blend the sugar and water, and stick it in the fridge to cool for a bit before tossing.
 
Spices/Flavours that go well with pineapple... Anise, Apple, Avocado, Bacon, Banana, Blue Cheese, Chili (it's really great!), Chocolate, Cilantro, Cinnamon, Coconut, Grape, Grapefruit, Cheese, Mango, Orange, Proscuito, Raspberry, Sage, Strawberry, Vanilla and White Chocolate
Cantaloupe isn't in my book, but melon is and it's... Almond, Anise, Ginger, Grape, Mint, Orange, Proscuito, Rose, Strawberry and Watermelon.
When mixing, you need to check both lists. We've tried the chili and pineapple and it's great. Doesn't have to be HOT chili, but it is nice when it is.

Mort, remember at Tipsy's we had grilled pineapple brushed with some jalepeno? That was a little too spicy for me, and for breakfast, maybe. I make a cantalope salad with fish sauce, red pepper flakes, lime juice and sea salt that we eat all summer long.

We keep Stoneyfield Farm Banilla Yogurt on hand all summer for toppings. It is great served plain over fruit cup but would also make a nice base for other add-ins like ginger or even lime. We get tons of comments and questions about what the sauce is. We get it at Stop and Shop and Shaws. Give it a try, your guests will love it!
 
too late to help but this is a hit ... it's bad and it's sweet and it's simple and easy
7 1/2 ounce container of Marshmallow Fluff (or marshmallow creme for those who are not fluff people)
8 ounce package of cream cheese softened (I have not used whipped or soft cream cheese, just the 'brick' but it must be softened for easy whipping)
3 Tablespoons of orange juice
1 Tsp grated orange peel
Just whip it up. Makes two cups.
This recipe came from the Marshmallow Fluff Yummy Book I've had forever. It's all over the internet in various forms now.
You don't even have to add the orange.
 
I keep a variety of coffee flavoring syrups such as Vanilla, Almond, Hazelnut, etc. (There are endless flavors out there.) They are great to mix with yogurt to thin it for a light topping on grapes and melon, etc. They are also good mixed with frozen fruit in the blender to make a sauce to squirt over the top of fruit or yogurt. A small scoop of Cabot Greek Whole Milk Plain yogurt over the top of the fruit with a squirt of flavored fruit sauce is good.
Honey Roasted Almond slices from Trader Joe's over yogurt with a drizzle of honey dresses up any fruit nicely.
