So I did the brunch ... it was between 50 and 60 people
My mini quiches were all puffy when I made them but deflated when refrigerated. They puffed back up a little when I heated them in the oven for serving. I wish I had time to make 10 dozen quiches in the morning but all were eaten and folks seemed happy.
Effusive thanks for the feast which really was very basic.
In addition to the quiches ... three varieties ... served hot right out of the oven, there was
Big platter of canteloupe, one of watermelon chunks, one of strawberries. Piled high. And some blueberries.
Three loaves each of Blueberry muffin bread and banana bread (home made) all cut up and piled high.
Enormous green salad with shredded parmesan cheese and large seedless grapes.
4 dozen bagels sliced and two big containers of cream cheese and some butter.
A large white cake with white frosting.
I didn't make the cake or the bagels
Coffee and tea
Orange juice and another juice someone brought.
Everything was eaten ... it was funny how people helped arrange the food and I went in and rearranged so it made more sense. funny to me how people just put it on the table in such a random way. I put the fruit together. Salad with salad dressing. Bagels next to the breads. Quiche in the center, cake at the end along with a few sweets someone brought. And I added height for a few things. I was worried I wouldn't have enough food, brought pasta and sauce but didn't cook it up and wish I had. The kitchen was so hot that day so I stopped. But all in all, was okay. The bagels were a last minute purchase and I'm so glad I got them since they were gone!
I think the mini quiches were the best choice instead of in pans ... for portion control.
Sometimes I think just having food available that you don't have to cook is so very appealing. I put a few vases of flowers on the table.
