How long can cheesecake sit out without going bad? It's 75 degrees in the house.
 
Not sure if the 41 degree rule applies. In any event, why not put the cheese cake in a cool environment by placing it on a plate with cold packs underneath. You would have to figure out an artful way of presenting it but could certainly extend the amount of time it was left out.
If you enclosed it in a glass cloche, something like this, you could put ice in the tray part, put the plate with cheese cake on top and then put the bell part over the cheese cake. Just a thought.
 
Thanks! I was going to make mini cheesecakes but then it got too hot in the kitchen.
