I offerered to make the cake which turned into cupcakes
I have a great chocolate cake recipe, I'm set on frosting but I can't find my french cupcake recipe. It's a lot like pound cake but like 1/2 pounds ... rich and dense and really good. I'm looking at all these recipes online for 'pound cake' and I am sure I can make it into cupcakes ... but which recipe to follow? If you've got one, would you share?

Nothing better than angel food cake with icing for a cupcake.
 
How many do you need to make? The recipe for my Mother's Maraschino Cherry cake is a large recipe - it makes the wedding cake I do in one batch. Just leave out the cherries. Will send if you want it.
 
Thank you, yes please Kathleen. I am making 2 dozen 'white', 2 dozen chocolate, at least that's the plan ... would love to see the recipe. If I can't use it today, I can use it 'tomorrow' ... :)

4 cupcakes = Whisk 1 egg, 50gms caster sugar. whisk in 50gms butter/marg. Whisk in 60gms SR flour, splash of vanilla
Put 50gms mix in each cup cake case and bake for 15 mins at 180c.
Whisk 25gms unsalted butter with 90gms icing sugar, 1 drop of colouring. Pipe once cakes are cool.
I put a couple of cupcakes in each room as a welcome treat so I know this recipe off by heart. Best do multiples of 4 as you need to maintain the egg:mix ratio.

Sorry to say this but go get a box cake mix . Easy and they taste just fine. Or google a recipe. What so special about a plain vanilla cake?
 
I have a favorite recipe ... I haven't located it yet so I made a different one. Cake mix is not something I buy. Just my preference.
