Had a party on Sunday (41 year high school reunion!)
It was a pot luck and one guest brought cheesecake with homemade fruit topping. There was a lot left over so I warmed it and served it with waffles the next day. A big hit. So I asked for the recipe.
She said, cut the strawberries, add the blueberries, sprinkle with sugar and leave them in the zip lock overnight. They make their own liquid.
That's It???? I can handle that!!!!! Will try it over the weekend. Have you done anything similar?

Oh, that works. You do it regularly when making jam. The fruit gets all mushy from losing it's liquid though.

I'm going to try your recipe. Can you tell me, does it keep? Can I make a huge batch and use it over a week or so? Or must it be freshly made?
(Not news to anyone but) I work away from the house 5 days a week. I love finding ways I can make something on the weekend that DH can then use through the week.

I make a fruit sauce once a week in season. I use all the berries from the week that have not been used up, sprinkle them with a little sugar (I don't like them too sweet and can add additional sugar along the way, if needed), add about 1/4 cup or less of juice (whatever I have offered at breakfast: orange, black cherry-cranberry etc) and cook, stirring for about 5 minutes. Done! Holds nicely in a jar that I buy at Xmas tree.
Guests love it as a side with homemade ricotta, over pancakes, waffles etc. And it is delicious over ice cream as a quick dessert for summer company.
 
I heat the berries up a little with lemon and sugar. Let sit over night.
Put over panna cotta.

The one that uses 1 cup of sugar will keep, the sugar ensures that. I always suggest adding at least a Tbsp of lemon juice, which makes the fruit flavour more clear.
You can also add a little extract if you want, like vanilla for blueberries or raspberries, or a tiny bit of cloves and almond extra for peaches, for example.

I'm not the world's greatest cook either. My mom loves to do things that she can put in the freezer for later. Why go through all the work to make a casserole when you can make two or three and put them in the freezer for later? That's her thoughts.

I'm not the world's greatest cook either. My mom loves to do things that she can put in the freezer for later. Why go through all the work to make a casserole when you can make two or three and put them in the freezer for later? That's her thoughts.

Plus of course, we have the side-by-side in the kitchen and the extra one in the basement (all under 8 years old, of course). I hardly have room to store anything in them. In fact, I'm out of bread for french toast and almost no where to store it.

My freezer is the top part of a 21 cu fridge. When we got the fridge, Himself said it was too big. Cannot tell you how many times he has said since then, there is not enough room in here. Got the largest one I could get in the space we had between the sink and the dryer.

We have an apartment size fridge with freezer. But, Gomez shops everyday so we're only storing the next day's breakfast and the staples like butter, sausage, jam.
We have a mostly empty freezer in the basement but that only gets used for things like butter or if I freeze berries to make jam over the winter.

But what about your own food? We have a family 'fridge and an inn 'fridge.
But I do hear you that shopping everyday helps. We shop two or three times a week for the inn and once a week for us.

Ah. I was only talking about the inn. We also have a fridge for ourselves. No commingling of food allowed here. We have two kitchens.
