A friend is having her kitchen remodeled. She cleared out the fridge and went off on a two week vacation since the whole kitchen is being gutted. She stopped by with 'eggs and vegetables' How kind!
What a surprise when I opened the bags and found pasteurized eggs ready to use. Two cartons of them, quart size. I had no idea she used these. The food pantry declined to take them as they don't take refrigerated items so I made myself some scrambled eggs with them this morning. Tastes just like, well, eggs.
If I remember correctly, 1/4 cup is one egg. I could use them in cooking as well.
I looked them up online and found a recall back in 2010, that's about it.
It never occurred to me to buy food service eggs all beaten in pourable form, I used to buy flats of eggs, 30 eggs. I don't know how the prices compare. Plus I like to know where the eggs came from ... but I won't waste these. They can't be frozen. Maybe I'll make a quiche for the family. I do have to say they are very very smooth.

There's a recipe here on the forum called 'Make Ahead Scrambled Eggs'. From the comments, it looks like you may have made it in the past. It uses a lot of egg and may be what you need for all those liquid eggs you have. I make these all the time and you can make it up ahead of time or do it in the morning. I cut up some ham and mix it in before baking. Guests love it.
 
Some health departments require you to use these eggs, especially for dishes that sit overnight. I always kept a carton in the freezer for emergencies.
