I'm always on the lookout for new ideas for breakfast, about a year ago I started french toast made from home made brioche, served with bacon and maple syrup. That's been really popular, in fact a couple of people have said it's the best french toast they've ever had.
Then I noticed the stuffed french toast + orange syrup recipe on the side of this forum page, but that's a bit convoluted, so I googled stuffed french toast. Wow, lots of ideas.
I tried a few on DH.
  • cream cheese, whisky & pecans - seemed like a good idea as we're in whisky country, but lacking
  • choc & hazelnut spread - loved it, but lacks finesse
  • cream cheese & strawberry jam & strawberries - sounds a lot nicer than it was.
Maybe because I'm using brioche which is quite sweet I haven't got the balance right between sweetening the cream cheese and the bread.
So, anyone have a favorite stuffed french bread recipe which is I can put together whilst cooking 5 other breakfasts?
 
We've done the cream cheese and strawberry one. Got tired of it and it was too sweet.
How about lemon curd and blueberries? That one goes over really well here. I make a blueberry sauce to drizzle over it.
 
Try adding balsamic vinegar to the strawberry jam. You can also just put in the cream cheese and then put the warmed strawberry jam with balsamic on top with a few sliced strawberries on top.
 
I like to make thick cut pannatone French toast with an orange slice garnish and a dollop of sweetened orange flavored mascarpone cheese. We put out maple syrup and honey but the pan atone is studded with dried fruit and is sweet enough as is.
 
Mine I use cream cheese with blueberry Honey mixed in cream cheese top with fresh blueberries on top then next bread slice . Dip all in egg and cream . Serve it with a lemon sauce. with a bunch of fresh blueberries on top Fan strawberry on side of plate. with a lemon rine mixed into whipping cream. Your right with so many ideas to choose from.
 
I made the Grand Marnier stuffed french toast from the recipes section of this website a few years ago. One of the best things I've ever tasted! Worth the trouble!
 
I've made stuffed toast with Nutella (hazelnut and chocolate spread) and strawberries. Guests love it! It is on the sweet side though.

I might save that up for Valentine's!
 
Try spreading the French toast with a little lemon curd and then topping it with a not too sweet blueberry compote or just fresh blueberries. Lemon and blueberries play well together. Dust with confectioners sugar.

Every time you post a food idea I want to come stay at your place! Do you make the pannatone?
Sometimes I serve apple compote instead of maple syrup for pancakes or french toast. Easy to make quickly.
 
Thanks for the ideas, what bread do people use, standard white? Sweet bread? Thick or normal?
The lemon curd and blueberry sounds amazing (I love lemon curd) as does the pannatone but I think that may be difficult to get around here outside of Christmas.

For the blueberry- lemon curd we use something called a farmhouse loaf. Sturdier than plain white bread so it holds up better and it's not sweet.

If I am planning on Baked Pineapple Toast (baked version of French toast), I bake my own bread. Either white bread or French bread and cut it in thick slices.
