Thanks, Seashanty, for asking about bagels. I have been making them again and DH is loving it. I made a double batch tonight - used a donut cutter for uniformity - making some plain, some with sesame seeds, and some cinnamon & chopped prunes (like that better than raisins). for a traiing session at City Hall tomorrow. Will serve a few to my guest for breakfast too.

Cross fingers I can get everything timed right - her seminar starts at 10 and my training class starts at 9.  I make coffee for our training classes too. Timing is everything.

thank YOU.  i have been working on my technique and trying various recipes ... last nite i made some beauties but i find them plain tasting ... haha ... they were 'plain' bagels ... but they lack flavor.  come to think of it, plain bagels don't have much flavor do they?

my sister wants me to make sesame seed bagels, brother in law wants (more) cinnamon raisin ... and i want to try making asiago cheese and or onion.

 I have an absolute passion for a good bialy .... not one of Maine's main offerings.   I've had a recipe sitting around for a couple of weeks now that I haven't got around to trying yet.  It's a lot of work and I think I'm worried it will turn out horribly.  Sometimes, when you really love something, trying to reproduce it becomes more difficult because the expectations are so high.
