Waffle Apple Crisp

This is my own creation which evolved from trying to make something that did not look like all of my other breakfast casseroles.

Asiago Bagel Breakfast Bake

'Treat your guests to a savory egg and Asiago bagel breakfast bake that you can prepare in advance.'  This is from the Panera Bread website.    The amazing picture is from BlessUsOLord blog that has awesome recipes.

I made this today and there were groans of pleasure.

Crustless Ham and Egg Tarts

Crustless ham and egg tart recipe

These are one of the prettiest, easiest brunch menu ideas. Just assemble and pop these little suckers in the oven-- then spend time with your guests. Each one is it's own perfect little serving... no need to worry about egg-dirty serving spoons and bits of scrambled egg tumbling onto the carpet. They're also pretty, impressive, and re-heat well. And are tasty as could be, of course. Recipe make 12 single servings or 6 double servings-- scale up or down depending on the potential pigginess of your guests.

Muffins Worth Getting Up For

This is best mixed up the night before first use AND will keep in the refrigerator for several weeks in an air-tight container. The yield varies depending on mini or regular. The original reciper says 16 to 20 regular.

Vegan Breakfast Burrito

This is a recipe I threw together without measuring, so amounts are approximate.

Spiced Pear Butter

Poached Eggs

Had a guest specifically request these and luckily my father-in-law (who was a cook in the Coast Guard) was here to show me how to do them.  Don't know why but I was freaked out about it, thought they would be difficult but they were extremely easy and the guest was thrilled.  I was happy to be able to add this to my repertoire.

Crock Pot Peaches

Wake up to a house smelling great. This dish is almost like bread pudding and makes a great side dish, especially with whipped cream on top. It's best to use canned peaches instead of fresh. Also great with berries.

Apple Quiche

Fabulous! What a wonderful change of pace for brunch or lunch! Use an apple that will hold its shape when baked -- Granny Smith, Golden Delicious, Rome, or Northern Spy will all work. Avoid McIntosh and Red Delicious.

Walnut Oatmeal Pancakes

Very filling and very easy pancakes
