Description

Ingredients
| 1 | deep dish pie crust | |
| 6 | oz | lump crab |
| 4 | eggs | |
| 1 | c | heavy cream |
| 3 | T | butter |
| 3 | T | finely diced onion |
| 1 | T | grated parmesan cheese |
| 1 | ds | tabasco |
| 2 | c | shredded swiss cheese (one package of kraft) |
Instructions
Prebake pie crusts - with the parmesan sprinkled over the bottom - 10-12 mins should do it
While crusts are baking sweat onions in the butter - once onions are soft add crab meat to warm
Beat eggs & add cream plus a dash of tabasco
Pile onion / crab / butter mixture into pie crust (I like to have it mostly in the middle)
Add Swiss cheese
Pour egg / dairy mixture over the top - take it slow, desite appearances almost all if not all WILL fit in.
Bake in 375 degree oven for at least 45 minutes - up to an hour. It's ready when the filling is golden brown and doesn't jiggle
Let stand for at least 20 minutes before slicing and serving.
I serve this (currently) with a roasted red pepper sauce striped down one side, a basil mint sauce striped down the other side and the rim of the plate lined with slices of tomato and cucumber
