Instructions
Okay, this is a great way to provide guests with a portion contol size of the breakfast standards. Spray cupcake forms with olive oil then roll out white bread or whole wheat bread slices until very thin-then cut with a pastry cutter or glass to form circles. Each cupcake portion will need about one slice of bread or 2.5 rounds. Don't concern yourself with crusts sticking out above the pan as it adds some creativity at the end. Place mushrooms, green peppers, cheese or whatever you traditionally like or serve in an omlette. Then crack an egg on top of each cupcake form add your favorite spice and bake for 20-30 minutes. Each "cake" slides out beautifully!
