Description
Moist & tasty gingerbread/ This recipe can be halved
Ingredients
| 1 | oz | egg |
| 1 | c | sugar |
| 1 | c | dark molasses |
| 1 | c | sour or buttermilk |
| 1⁄2 | c | shortening |
| 2 | t | ginger |
| 1⁄2 | t | cinnsmon |
| 1⁄2 | t | cloves |
| 2 | t | baking soda |
| 3 | c | flour |
| 1⁄2 | c | fruit (chopped OPTIONAL) |
Instructions
Mix soda with sour milk and add to molasses. In a large bowl cream shortening, sugar, spices, amd egg. Add molasses mixture and flour. Beat at low speed for 2 to 3 minutes until mixed. Fold in chopped fruit (prunes, apricots, or plumped raisins). Spray a 9 x 13 pan with non-stick spray and lightly flour. Pour in gingerbread mixture and bake in a pre-heated 350 F oven for 30 to 45 minutes.
Notes
NOTE: To make this fat-free and/or sugar-free - replace 1 egg with 2 egg whites, use unsweetened applesauce measure for measure for the shortening, 1/2 cup Splenda for the sugar, and soured skim milk . A half recipe makes 1 doz. mini-muffins (whole recipe makes 3 doz) and bake the mini-muffins 15 - 16 minutes.
