Maple Oatmeal Muffins

Description

Light, chewy, sweet, with a big maple butter taste.... like a big open textured cookie in the shape of a muffin--oh, I want one now!

Ingredients

1cflour
1cquick oats
2tspbaking powder
1tspbaking soda
1tspsalt
1tspcinnamon
1⁄2csoft butter
1⁄2cdark brown sugar
1⁄2creal maple syrup
1tspvanilla extract
2 eggs
1⁄2cmilk
1⁄2cnuts (chopped)

Notes

Cinnamon and nuts are optional, you may use cream instead of milk, but DO use REAL maple syrup and REAL butter!

Preheat oven to 400 degrees

In a small bowl combine:

flour, oats, baking powder, baking soda, salt, and cinnamon

 

In a large bowl

Cream together:

butter, sugar

Add maple syrup and cream until blended

Then:

Beat in vanilla, eggs and milk (or cream!) until well blended

 

Stir in dry ingredients, mix just until well blended....add nuts if desired

Spoon into paper lined muffin pan...don't over fill, these will puff up then flatten out as they bake.  This will make about 15 if you add nuts.

Bake about 15 min, until brown, I take them out and baste them with a bit of maple syrup and put them back in for a couple of minutes....Yum!

These are REALLY good.  The texture is light and a little too crumbly, so I add just a bit more flour...Do give them a try!
