Maple Pecan Granola a la Gillum

Tasty and EASY Granola


1⁄3cdark brown sugar (packed)
1⁄2cvegetable oil (or melted coconut oil)
1⁄2tkosher salt
1creal maple syrup
4 1⁄2cold-fashioned oats (not quick oats)
2ccoconut (shredded)
2cpecans ((halves or roughly chopped, your choice))


Pre-heat oven to 300 F. Line baking sheets with either parchment paper or foil (I spray the foil with non-stick) – have used both.
In a large bowl, mix the oats, coconut, salt, and pecans. In a smaller bowl, whisk the oil, vanilla, brown sugar, and maple syrup. Pour the liquid over the Oats mixture, folding the mixture until everything is coated. Spread the mixture evenly on the lined baking sheets. Bake for 30 – 40 minutes, stirring every 10 minutes or so until the mixture is golden brown. Completely cool on the baking sheet before storing in airtight containers. Will keep for up to 2 weeks if it lasts that long.


This recipe can be halved. The measurements are approximate as I have been playing with the original - as you should to get your best taste TO YOUR TASTE. I have to hide it from Himself. Have been using it in parfaits fruit dishes.
