Description

Here's a twist on eggs benedict that even those who don't like to see egg yolks will love.

Ingredients

2 english muffins
4slicanadian bacon
5 eggs
3⁄4cmilk
  swiss cheese, grated

Instructions

Use 4 8 oz ramekins.Butter ramekinsor spray with non-stick oil. Cube English muffins (approximately 1/2 inch cubes). Place Canadian bacon on bottom of ramekin. Sprinkle with small amount of cheese. Put cubed muffin on top of cheese. Sprinkle more cheese on top. Beat eggs and milk together, then pour over bread mixture. Refrigerate overnight (or give time for milk to soak into muffins). Bake uncovered in 350 degree oven for 30 -35 minutes. When done, turn ramekin over into serving bowl or plate. Canadian bacon will now be on top. Pour your favorite Hollandaise sauce over eggs & serve.
