Description

This is quick and easy to make. It is also and easy one to play around with for your own tastes. Original recipe calls for 2 pkgs spinach - I use one.

Ingredients

 pkfrozen chopped spinach
2cmilk
6 eggs
1⁄2 onion (small)
3⁄4cshredded swiss cheese

Instructions

Thaw and drain the spinach. Put milk, eggs, onion, spinach, and cheese in a blender (I usually use 3 or 4 slices of Swiss because that is what I would have in house) and blend. Spray an 8 inch square baking dish with non-stick spray. Pour contents of blender into pan. Bake at 325 degrees for apporx 45 minutes or until set. Cut into 6 pieces and serve.

Notes

You could also sprinkle shredded Swiss and minced onion on it before baking. All sorts of nice garnishes are possible.

sounds something like my crustless spinach quiche - i love individual thingies -- yum.  this recipe would be great for guests!  funny thing about spinach. my mom never cooked it so i never had it til about 10 years ago in an egg dish and loved it. 

i stayed in a place in new hampshire that had their signature breakfast ... the inn changed hands and the recipe is still being made there. they served baked eggs made in cupcake tins - i think the egg was added to a popover at the last minute. very very good!

We do an eggbake in the muffin pan! I used to make a popover kind of thing that I found on the back of a tin of Pillsbury croissants. You put the croissant dough, not rolled up, in a greased muffin pan and then crack an egg into it. Bake until done. I doubt I put anything else in at that point, altho now I would.

forgot to add I usually serve this with the English muffin bread. If baking together the oven is a bit hotter (350) and 30 min. should do it.

This is actually like a spinach appetizer that was going around a few years back.  Cut into 2" squares.  Tasty.  I still don't know about the spinach here.  Maybe if I fried it first before I put it in the quiche.  haha!
