Vegan Breakfast Burrito

Description

This is a recipe I threw together without measuring, so amounts are approximate.

Ingredients

2 potatoes - cut into small cubes
3Tolive oil
2oztofu - crumbled
1⁄2pksoyrizo
  salsa
4 flour tortillas - small

Instructions

In a frying pan, heat olive oil and fry potatoes until done. Add crumbled tofu and soyrizo and cook on high until all is mixed throughly and hot throughout. Roll mixture into warm tortillas. Serve with salsa.

This vegan guest we just had wasn't obcessive about it. She said she wouldn't freak out if I used an egg in a baked product. She was very pregnant and due is 6 weeks. I double checked if she was still eating vegan since I have had other guests who when pregnant added in some animal products to ensure the baby developed properly.

She still ate vegan, but she was drinking regular coffee and some wine. Seems a little backwards to me, but hey, to each his/her own.

Thank you for sharing.  I made a note of this before when someone mentioned it but could not find the soyrizo here so ended up making avocado, tomato and veggie-cheese burrito that the guest loved. (with a side of salsa).

I will keep my eye out for soyrizo as I know you can freeze it.

I found out about soyrizo here on a post also. I was surprised it was in my local market out here in "Podunk". It was in the refrigerator section next to the tofu items.

Here's a tip if you're having a hard time finding some vegan/vegetarian items...go to an area that has an Adventist hospital. Adventists are mostly vegetarian and a lot of them vegan, so the markets around the hospital would carry more speciality items. I'm sure that's we have a good selection in both our markets around here.

None of those here either. Nor a Safeway.  I did look near the Tofu, I thought I would find it! 

We have discussed this here before and people thought I was mad.  I told them I would never forget a coworker who spewed a bagel chip out of her mouth when she found out it had worcestshire sauce as the very bottom of the ingredients, which has anchovy, which is one of the forbidden scavengers of the ocean.  You can buy vegetarian worcestshire sauce, FYI.

I threw this together this weekend for vegan guests. It was so good I enjoyed eating it too! I found the soyrizo in my local Safeway.
