Waffle Apple Crisp

Description

 This is my own creation which evolved from trying to make something that did not look like all of my other breakfast casseroles.

Ingredients

9 eggs, beaten
1 1⁄3cmilk
1ccheddar cheese, grated
2Tmelted butter
7 square waffles (frozen will work)
1cnapple pie filling (fresh will work)
1⁄2cextremely softened butter
3⁄4coatmeal
1cbrown sugar
3⁄4cflour

Instructions

 Mix eggs, milk and 2 tablespoons melted butter and pour in greased 8X12 casserole dish.  Sprinkle on cheese. Place waffles over entire surface (Cut the seventh waffle to fill empty spaces). Spread apples evenly over waffles.  Mix one stick of very soft butter, oatmeal, brown sugar and flour into a loose mixture (add 1 tsp. cinnamon if desired).  Sprinkle over entire dish.  Bake now or refrigerate overnight.  Bake uncovered at 350 for 50 minutes.  Do not let sides overcook.

I mentioned I found Pinterest.  I see some neat ideas and recipes there and then I found something very interesting...

I am a popcorn addict. I love the stuff. It goes back to my childhood of heating up the big cast iron pot and shaking it til my arms ached and going in and watching the championship fights with Dad. Just Dad and I.

For the Christmas season I added some raisins to this dish - yummy and get lots of requests for the recipe.

This look yummy and very easy and you can do the night before.   Looks like guest will have Waffle Apple Crisp this weekend.

This sounded so great I went out to purchase the waffles and pie filling so I can make it for my guests this weekend.  Well, to be honest, DH and I will also dive into this one.

Did you make it? How did it come out?

I am always hesitant to try new things with guests that I haven't tried on myself first.

Do you serve it with syrup?

It was very good.  I did add more flavoring - brown sugar, nutmeg and cinnamon (or you could use apple pie seasoning mix) to the pie filling as I do like a more spicy apple pie than the ones in the can and knew I did not have time to make my own filling like I will do from now on!  I also made more topping (oatmeal, brown sugar and butter) as I found it did not cover as well as I liked. 

I was (pleasently) surprised to find that the waffles were not recongizable.  All the guests liked it as well.  It was a good choice as it does not come out 'eggie' which was an issue with 2 of my guests who do not eat egg dishes, but who would eat dishes that are not overwelmingly full of eggs. 

I did not serve it with syrup (but offered) as I had added more 'sweet' to it by adding the brown sugar to the filling. Mine was not overly sweet and it was commented that they had expected it to be sweeter than it was, but it was perfect.   If you do not add the extra brown sugar would have syrup on hand for those with a sweet tooth. 

I served this with bacon on the side.    Received with a 2 thumbs up

 I love the idea of using waffles for this dish...the perfect solution to those extra waffles!  I have also used stale croissants in casseroles like this with good success and blueberries instead of the apples.  Fresh or frozen berries work well.  Usually I will prepare the bread/croissant and egg/milk/cinnamon portion the night before and refrigerate it.  In the morning I just flip the croissants in the pan, top with blueberries and a crumble topping before baking.  I do offer syrup but there are rarely takers.  Thanks for this recipe!  It never occurred to me to use apples.
