Description
Very filling and very easy pancakes
Ingredients
| 1 | c | whole wheat flour |
| 1 | c | regular oatmeal, uncooked |
| 1⁄2 | c | cornmeal |
| 1 | c | finely chopped walnuts |
| 1⁄2 | c | all-purpose flour |
| 1 | T | baking powder |
| 4 | egg whites | |
| 2 1⁄2 | c | milk |
| 1⁄4 | c | honey |
| 1⁄4 | c | unsweetened applesauce |
Instructions
Put all dry ingredients in a large bowl. Make a well in the center and add remaining ingredients. Mix and let sit for at least 10 minutes Spray a skillet or griddle with non-stick spray. Heat griddle or skillet until cold water sizzles on it. I do one pancake at a time using a ladle to put batter onto the griddle (for smaller pancakes use 1/4 cup batter per pancake). Cook until tops are covered with bubbles and edges are cooked. Turn and cook other side. Serve with maple syrup or favorite pancake topping. This recipe can be halved.
Notes
A half recipe is more than enough for 2 people with 2 large pancakes each.
