Peanut Butter, Banana, Chocolate Chip Muffins - Gluten-free

These muffins were easy to make. It also has only one kind of "special" flour. We tasted one and it was rather good!

Chocafe Drizzle

This topping or plate drizzle is easy to make and is a nice way to add some flair to banana breads, muffins, and simple coffee cakes.  The coffee cuts the sweetness of the chocolate syrup and gives a nice "grown up- flavor.   As a drizzle on the plate it leaves it up to the guest whether they want to use it for sweetness or leave the decoration where it is.

KENTUCKY BROWN or HOT BROWN

A Hot Brown is a hot sandwich originally created at the Brown Hotel in Louisville, Kentucky, by Fred K. Schmidt in 1926. It was one of two signature sandwiches created by chefs at the Brown Hotel shortly after its founding in 1923. It was created to serve as an alternative to ham and egg late-night suppers.[1]

KENTUCKY BROWN or if outside of Louisville but still in KY it is called a HOT BROWN

Peach Stuffed French Toast

Delicous variation on the old stand-by breakfast dish.

Southwestern Potato Pie (Jeanne's version)

Cheesy Potatoe-y goodness in the morning; sticks to your ribs.  Easy preparation and can be made the night before.  Can be served with a side of salsa for garnish.

Blueberry (or Peach) Breakfast Pudding

This is another great do the scut work the night before. It is also a way to use lefover breads. I use French and English muffin and sometimes toss in some whole wheat.

Baked Pineapple Toast

This can be made ahead and can be increased in serving size by using a larger pan. Excellent presentation and easy to serve - even by a one-handed rarely used fill-in as as serving person.
