Instructions
Place a corn tortilla on the bottom of a pie plate. Add 6 eggs which have been blended with 1/4 cup milk or 1/2 & 1/2, and your other ingredients..such as mushrooms, onions, cut chili pepper (without the seeds), hash browns. Top with any cheese of your choice: parmesan, cheddar or swiss. Place in 350' oven and cook for 1 hour. Make several of these at a time as they can be frozen and then reheated in the microwave when needed. Add avocado slices & red or green salsa as a side accompaniement.
Notes
Serve bacon, sausage, juice, coffee & a sweet...and you have a great breakfast!
Should be called Mexican-Style Quiche. Real men and Mexicans (and I are both) don't eat quiche!
We have an egg dish we called Southwestern Breakfast Roundup because it uses chilis and cilantro and is topped with salsa and sour cream (diced jalepeños on the side). We didn't call it "Mexican" because Mexicans don't make this kind of stuff.
I should post some authentic Mexican breakfasts for all you yankees/gringos. I think your guests would like them.
