Description

A moist skillet cornbread that is a real crowd pleaser!

Ingredients

2 eggs (beaten) (Beat eggs with sugar, oil, corn and sour cream)
1⁄4csugar
1⁄2cvegetable oil
1ccreamed corn
1clow fat sour cream
1ccornmeal (Combine cornmeal, salt and baking powder)
1⁄4tsalt
2Tbaking powder

Instructions

Preheat oven to 400 degrees F

Oil a 10" black skillet

 Beat the wet ingredients.  Add dry ingredients and mix well.  Bake about 25-30 minutes until nicely brown and set.

Notes

Low fat sour cream works well.  I use 1/2 cup Bob Red Mill medium grind cornmeal and 1/2 cup Quaker yellow cornmeal.  This gives it an nice texture.  But it works well with stone ground, fine or medium cornmeal.
