Baked oatmeal as a breakfast starter with warm milk or cream is well received at our inn.
| 3 | c | rolled oats |
| 1 | c | brown sugar |
| 2 | t | ground cinnamon |
| 2 | t | baking powder |
| 1 | t | salt |
| 1 | c | milk |
| 2 | eggs | |
| 1⁄2 | c | melted butter |
| 2 | t | vanilla extract |
| 3⁄4 | c | dried cranberries |
Preheat oven to 350 degrees.
In a large bowl, mix together all ingredients adding fruit last. Spread into a 9x13 inch baking dish.
Bake in preheated oven for about 40 minutes.
Variations: fresh apples, raisins, and toasted walnuts. Bet it would be good with dried apricots and toasted pecans, too!
Adjust sugar to your tastes.
