Description
I can't say that I've actually eaten it, but it smells great cooking and toasts up well.
Ingredients
| 1⁄2 | c | milk powder |
| 1⁄2 | c | potato flour |
| 1⁄2 | c | tapioca flour |
| 1 | c | brown rice flour |
| 2 | T | sugar |
| 2 | T | xanthum gum |
| 1⁄2 | t | salt |
| 1 1⁄2 | T | yeast |
| 2 | eggs, beaten | |
| 1⁄4 | c | melted butter |
| 1 1⁄4 | c | water |
| 1 | t | vinegar |
Instructions
I also add (optional): 1 Tbsp flax seeds, 1 Tbsp sesame seeds (for extra fibre)
Beat eggs and mix with water, vinegar and melted butter. As per most bread machines, put this in the bread pan first. Then add all the dry ingredients, scoop out a spot and put in the yeast. I use the whole wheat setting (3 hours, 40 minutes). Stir the ingredients after the first couple of minutes just to make sure everything gets mixed together.
My son, who has since moved out on his own, uses 2 cups of water now and finds the bread softer and fluffier. I think its too wet but I guess that even over the 1 1/4 cup a bit would be alright
Notes
If you don't regularly cook GF, you may not have some of these items on hand. Make a visit to your local bulk store (or health-food type store) for the small amounts you need.
Once it is made and well-cooled, slice it up and freeze for future Celiac or wheat-free guests.
