Description

Easy 5-ingredient recipe for gluten-free cookies

Ingredients

1cpeanut butter
3⁄4cbrown sugar
1tbaking soda
1 large egg
1⁄2cchocolate chips

Instructions

In a large bowl, combine the first 4 ingredients, then stir in chocolate chips.

Using your hands, form the dough into golf-ball-sized balls (approximately 1 1/2 inches) and place onto a baking sheet about 2 inches apart.

Bake for 8 to 10 minutes, or until browned.

Remove from the oven and let cool on the baking sheet for 5 minutes.  Then, using a spatula, transfer to a wire rack and cool completely.  The cookies are a little more fragile than cookies with flour, so handle with care.

  These are good!  My mom found them in a magazine and made them.  Ours called for white sugar (1/4 cup) and half the peanut butter.  Made 12 cookies.  We used crunchy PB.

I've been making this exact recipe for years and guests love them.  Remember that some chocolate chips can have gluten in them so you have to be sure you're using those ones if the person is a true celiac.  Most people gluten intolerant are fine with the regular chips.
