Description

Yummy Cookies!

Ingredients

  • 1 c butter
  • 1⁄2 c reduced fat peanut butter
  • 1 c packed brown sugar
  • 1 egg
  • 1 egg white
  • 1 tsp vanilla
  • 3 c rolled oats
  • 1 tsp baking soda
  • 1⁄4 tsp salt
  • 1⁄2 c chocolate chips

Instructions

Preheat Oven to 350.

Combine Butter and Peanut Butter.  Add Sugar, Egg, Egg White and Vanilla.  Beat until smooth.

Add Oats, Baking Soda, Salt, Chocolate Chips, mix well.

Drop spoonfuls of dough about 2" apart on baking sheet.   Bake 15-17 minutes until golden.  Let cool a few minutes on sheet before removing to rack.

What makes these cookies even better, add in a handful of M&M's, Dried Cranberries, Dried Cherries, White Chocolate Chips, whatever you have and sounds good! 

Notes

My Mother In Law has Celiac Sprue and last year the research was just released that Oats in moderation is OK for the Gluten Free diet! So I made these before she came to visit and she LOVED them and said they were the best cookies she's ever had! We had to make a 2nd batch while she was here.
