Tomato Orzo Soup

This one is not for guests but for my hard-working comrades.  A grown-up version of a childhood comfort staple.  Serve with a grilled cheese sandwich on multigrain bread and you've got yourself a healthy, vegetarian lunch (NOW GO LOCK THE FRONT DOOR AND CHOW DOWN BEFORE YOUR EARLY CHECK-INS SHOW UP)!!

Bread Pudding

This is a good fast morning breakfast because the "scut" work is done the night before. Use white, whole wheat, French, english Muffin bread - whatever you have on hand and "stale" is great for this. I have been usind a can of sliced peaches abd reserving 2 or 3 similar-sized slices for garnish with a marschino cherry. Serve the vanilla yogurt on the side for guests to decide how much - I like it slathered!

Spinach Bake

This is quick and easy to make. It is also and easy one to play around with for your own tastes. Original recipe calls for 2 pkgs spinach - I use one.

Delicious Gluten-Free Muffins

1 C. Authentic Foods Pancake & Baking Mix*
1/2 C sugar
1 TBL sugar
1/8 tsp Xanthan gum (optional)
1/8 tsp allspice
1 tsp cinnamon
1/2 tsp baking powder
2 TBL corn or canola oil
1/2 tsp lemon juice
1 egg or 2 egg whites
1/4 C cream
2 TBL water
1/2 C. raisins and/or nuts
paper muffin cups

Preheat oven to 375 degrees.
place paper muffin cups into muffin
tin, spray with baking oil, & set aside.

In a medium bowl, mix together first 7 ingredients.In a small bowl, beat together remaining wet ingredients.Add to dry ingredients, and stil until smooth. Add raisins and/or nuts.Divide batter into 6 muffin cups andBake at 375 degrees for 20 minutes.Muffins should be golden.Muffins are donewhen a toothpick inserted in centercomes out clean.
