I had some apples that weren't real crisp so peeled and cored and put them in a crock pot. The pot was full and I only added cinnamon. Cooked on high for 2 hours and they were less than half the size. Some chunks still, but put in jars in refrigerator. I add either sugar or splenda when I heat to serve.

Basic Applesauce Flavorings In 2-qt. microwave-safe dish, combine apples and water. Cover with lid or vented plastic wrap; microwave on high (100%) 12 to 14 minutes or until apples are tender. (If microwave does not have carousel, rotate dish every 4 minutes.) Stir in sugar and choice of flavorings. Microwave on high 3 minutes or until sugar dissolves. Stir and set aside to cool before serving. If finer texture is desired, mash or puree apple mixture and put through a strainer.
Notes
If you have older apples not as crisp this is great! I use raw sugar in mine and try to use a tart and sweet apple together.
