Description

Very yummy apple squares that a cinch to make.

Ingredients

1 1⁄2csugar
3 eggs
1coil
2cflour (i used 1 cup whole wheat flour and 1 cup white flour
1tbaking soda
1⁄4tsalt
4 apples (peeled and chopped)
1cchopped nuts
1 generous splash of milk (if using whole wheat flour)
1tcinnamon and a pinch of nutmeg

Instructions

Heat oven to 350 deg. Grease a 9 x 13.

In a large bowl, blend the eggs, sugar, and oil. Set aside.

In a medium bowl, combine the flour, baking soda, cinnamon, and salt, Combine the flour mixture with the egg mixture and stir thoroughly. Fold in the apples and nuts and mix. (Add in the spash of milk if using the whole wheat flour.) Pour in the prepared pan. Bake 50 - 55 minutes or until done. Cool and cut into squares.

Are these something that can be served at breakfast instead of a muffin, or are they more of a snack/dessert?

You could absolutely serve it instead of a muffin.

This morning again, guests just love them Smiling

However, I will try to switch the oil with Applesauce and see what happens.

Use only unsweetened applesauce or it will mess up the sugar balance.

OMG!!!! just made them for the first time and got nothing but raves....They are yummy.....even thou at first I thought...1 cup of oil....that can't be right.....they were delicious!  But, I did use extra virgin oil.......all I had on hand.

ewwwww!!! EVOO!!! ...especially a cup of it....If it was a good quality one, didn't that leave a weird taste to them???  I would not use and I don't think they recommend using olive oil in baking.

Honestly, no , it did not leave any wiered taste to it. It tastes like a spice cake. maybe this will be the new rave !!!!!
