Apricot, White Chocolate and Walnut Scones

Description

My very favorite scone recipe, the white chocolate keeps them very moist.  Sounds like it would be overly sweet but the ingredients balance each other very nicely.

Ingredients

2cap flour
2Tsugar
2tbaking powder
1⁄4tbaking soda
1⁄2tsalt
3⁄4cwhite chocolate chips
3⁄4ccoarsely chopped walnuts
3⁄4cchopped dried apricots
4Tcold, unsalted butter
1 1⁄2tvanilla
1⁄2cbuttermilk (cold) plus more as needed
2 eggs (large)

Instructions

Preheat oven to 375º.  In a large bowl combine flour, sugar, baking powder, baking soda and salt.  Cut in butter until mixture has the texture of soft crumbs. 

In a medium bowl, whisk together eggs, vanilla, and buttermilk.  Pour this mixture into the flour mixture and stir until the dough forms a soft, shaggy ball, adding additional buttermilk 1 tbsp at a time, as needed.

Add the white chocolate, walnuts, and apricots, stirring until evenly distributed. 

Turn dough onto a lightly floured work surface and knead gently about 10 times, or just until the dough holds together.  

Divide into 12 mini-scone pans.  Or divide the dough into 2 equal portions. 

Pat each piece into a 1 inch thick round, 6 inches in diameter. 

Using a sharp knife, cut each round into 4 wedges. 

Place wedges ½ inch apart on the baking sheet.  Bake on the center rack 15 to 20 minutes, or until golden brown.  Remove from the oven and cool on the baking sheet.

Maybe if this (sulphur dioxide) is a common allergen, another goodie could be substituted instead?

Sounds wonderful!

However, bakers need to be mindful of the dried apricots.   Most dried fruit is preserved with sulphur dioxide.  There are many, including moi that are allergic to it.  It can cause severe respiratory distress.

I've been able to find dried apricots in the Whole Foods market that did not contain sulphur dioxide.

Just curious. When you have stayed at B&Bs in the past, have you told them that you're allergic to sulphur dioxide? I don't think I've ever had someone tell me that they were.

I'm afraid I'm as guilty as many of our guest in not mentioning things.  In fairness to them,  if you regularly exclude something from your diet, you're probably not as likely to think of it unless you are diabetic or glucose intolerant.   My sulphur dioxide sensitivity is usually the farthest thing from my mind when traveling because I encounter so rarely.  Although, I do remember how much I enjoyed the wines in Italy because they didn't contain sulfides like American wines do.

Yup, it's the little things we forget about.

Yesterday, I had a guest come up to me AFTER breakfast and tell me he was allergic to soy. Fortunately, there was no soy in anything, but I jokingly told him that was the kind of thing you should tell the innkeeper BEFORE you check-in or eat breakfast!

 Very good point!  We get ours at the local farmer's market and they do not contain preservatives.
