Description
I adapted this recipe from the back of a jug of cider. It's a little more healthy, but no less tasty. It's also satisfyingand will definitely hold you over until dinner.
Ingredients
| 1⁄4 | c | white sugar or sucanat |
| 1⁄2 | t | baking powder |
| 1⁄2 | c | each peanut butter and butter |
| 1 | cn | sweet cherries, drained thoroughly |
| 4 | c | cereal, i used puffed brown rice. |
| 1 | c | apple cider |
| 1 | egg | |
| 1 | c | oats |
| 1⁄2 | t | salt |
| 1 | T | vanilla |
Instructions
Heat oven to 375. Simmer cider in saucepan until reduced to 1/4 c. Cream sugar, butter, and peanut butter in a large bowl; mix in cider, vanilla, and egg. Stir in remaining ingredients except cereal. Gently sitr in cereal. Spread in ungreased 13x9 pan and bake 15-20 minutes or until golden brown. Cool and cut into bars.
You can substitute dried fruits for the cherries; soft apples or raisins would be good.
