DH's "Perfect Cookie" Chewy Coconut Cookies

Description

Chewy, buttery, too simple, too GOOD!

Ingredients

1 1⁄4cflour - all purpose
1⁄2tbaking soda
1⁄2tsalt
1⁄2cbutter
1clight brown sugar
1 egg
1tvanilla
1 3⁄4cflaked coconut

Instructions

 

Preheat oven to 350 degrees

Combine flour, baking soda and salt, set aside

Mix butter until creamy, add brown sugar and  again mix until creamy; add egg and vanilla, mix well.

Add in dry ingredients then stir in coconut

Form loose 1" balls or drop by spoon onto ungreased cookie sheets

Bake about 8-9 minutes until just golden around edges.  Make a cup of tea and enjoy!

 

Notes

Would be great with a bittersweet chocolate drizzle.  Neither DH or I are overly fond of coconut, these are more like the cookie in a good white chocolate macadamia nut kind of cookie--very buttery.

She means to cream the butter & brown sugar together, I'm pretty sure.  Smiling

Have you ever added chocolate chips?  It's rainy, drizzly, and yucky here...a good day to bake something! 

ETA:  Rainy and very gloomy for the 5th day in a row here so a good day to bake something.  I added mini semi-sweet chocolate chips and these cookies are awesome!  Like a cookie that tastes like a Mounds bar.  yummy...

I haven't tried adding chips, D.H. insists these are perfect and that I can throw out all other cookie recipies now--I think they would be good, might change the texture?  Might be safer melted and drizzled on top.
