Description
These are make-ahead cookies my Mother made only at Christmas. Elapsed time takes place over 8 days. Baking time about 10 minutes.
Ingredients
| 1 | c | honey |
| 1 | c | granulated sugar |
| 2 | T | orange juice |
| 1 | oz | each citron, candied orange peel, lemon peel |
| 2 2⁄3 | c | blanched almonds |
| 2 | c | all-purpose flour |
| 1⁄2 | t | salt |
| 1⁄4 | t | each cinnamon, cloves, nutmeg, allspice |
Instructions
Heat honey. Add sugar and juice. Force the citron, peels, and 2 cups almonds through a food chopper. Add to first mixture. Add sifted dry ingredients. Cover and chill for eight days. Roll very thin and cut with floured scallopped cutter. Bake on greesed cookie sheets in moderate oven, 325 degrees F for 8 to 10 minutes. Spread with icing made of confectioner's sugar mixed with orange juice and a little gratted rind. Top each cookie with a whole almond, using the remaing 2/3 cup. Store airtight for 2 weeks before using. Yeild approx. 6 doxen
