Description
This is a make-ahead Christmas Cookie
Ingredients
| 1 | c | sugar |
| 1⁄2 | c | honey |
| 1⁄2 | c | chopped candied orange and lemon peel |
| 1 1⁄2 | t | cloves |
| 1 1⁄2 | t | nutmeg |
| 1 | T | cinnamon |
| 1 | t | baking soda |
| grated rind of 1/2 lemon | ||
| 1 | c | unblanched almonds, sliced thin |
| 2 3⁄4 | c | all purpose flour |
Instructions
Heat 1/2 cup sugar and honey to boiling. Remove from heat and add peel, spices, and soda disolved in 2 Tablespoons cold water. Add remaining ingredients. Knead until well-blended. Roll dough to 1/2 inch thickness. Put on greased waxed paper on cookie sheet. Bake in moderate oven - 325 degrees F - for about 25 minutes. Turn out on wire rack and remove paper at once. Turn right side up. Cook remaining 1/2 cup sugar and 1/4 cup water until mixture spins a thread. Spread on Leckerli. Cut in diamonds. Store airtight at least 1 week before using. Makes about 5 dozen.
