Description

These are a family favorite.  And so easy!

You can serve them plain or with a variety of toppings

Ingredients

  • 1 lb cream cheese, softened
  • 2 eggs
  • 3⁄4 c sugar
  • 1 t vanilla
  • 24 vanilla wafers (i like nilla)
  • 1 choice of toppings (see recipe)

Instructions

Preheat oven to 375 degrees.

Blend cream cheese, eggs and sugar until smooth and creamy. Add vanilla.

Put cupcake papers in cupcakes tins and place one vanilla wafer, rounded side up, in each paper.

Spoon cream cheese mixture over each wafer.

Bake 10 to 12 minutes.  The mix should look 'set' and firm ... try not to overcook or your cheesecakes will be dry.

Let cool and then refrigerate.

Serve plain or Top with your choice of cherry pie filling, blueberry pie filling, pineapple (chopped and drained), or frozen sweetened strawberries (thawed and drained) or fresh fruit.

I recently made 'truffle cheesecakes' using chocolate wafers instead of vanilla wafers and topping with melted caramels ... after that hardened, drizzled with melted semi-sweet chcolate.  Not sure what Mom would have thought of that!

i made some today for a family pot luck dinner by request.  and i didn't sample one!  (but i want to) 

they are so easy, i should make them more often.

Just made these, only got 16. Curious if I used the wrong size muffin pan? (I used a 'normal' one, not mini, not huge.)

I cut strawberries in the shape of hearts (thanks whoever told me to do that) and will put them out (and take pix) when they are cold.

 Cool!  How do you cut a strawberry in the shape of a heart?  

We have to do a dessert/lecture session next month and these sound like they will fit the bill nicely.  

Slice off the stem & greens. A lot of strawberries have an 'axis' you can cut along, so cut the strawberry in half from stem to bottom. Lay flat on cutting board and cut around the stem end in the shape of a heart. The bottom part is already pointy.

you are fine with the 16.  depends on how generous you are with the batter.  i love the strawberry decor.

Just wanted to report in...every last one of them was eaten. And they got raves. Thanks! This was incredibly easy and fun.
