Description
these are amazing and so easy!
i saw the recipe on the today show online and made some up.
Ingredients
- 2 c grated parmesan cheese
- 3⁄4 c walnuts, roughly chopped
Instructions
Preheat oven to 375
Line a cookie sheet with parchment paper
Mix the cheese and walnuts in a bowl and spread onto the paper lined cookie sheet.
Bake about 5 minutes until the cheese melts and is bubbly. Watch carefully, you don't want it to burn, just let the cheese melt and turn golden. Remove from oven and allow to cool.
Break into random pieces.
Notes
I used shredded parmesan cheese from the deli instead of grating it. After searching online, I found a similar recipe using 1/2 cheddar cheese and 1/2 parmesan and adding some thyme with the walnuts.
I also made an alternate spicey version by sprinkling a little bit of salt and chili powder over the original mixture before baking.

Hmmm sounds yummy. DId you need the extra salt though with parmesan? Carla Hall She was my favorite on Top Chef last year!!
i didn't add salt to the original version. if you use unsalted nuts and like salt you might want to try some. you can test it by putting a little parmesan cheese and chopped walnuts in a bowl and microwaving for just a few seconds. then taste and see what you think.
Switched out walnuts for pecans....yummy!
