Ingredients
| 1 | c | almonds |
| 2 | c | water |
| 1 | c | apple juice, optional |
Instructions
Soak almonds overnight in water. Not necesary if you have a tough blender, but recommended if you have a standard blender.
In the morning, drain almonds. Place almonds and water in blender and process. Empty canister into a wire sieve and drain into a bowl.You can move things along by pressing down on the pulp with a rubber spatula, or you can let gravity do the work.
At this point, the milk is fine for baking or cooking. If desired, one can add apple juice to make a pint total of liquid, which makes for a more pleasant beverage if it's to be consumed that way.

I decided to post this because of a past (sometime?) thread about milk subsitutes and accomodating dietary needs. We had to go dairy free for a couple years, and this became my go-to recipe. I keep almonds in the house anyway, and I find the result very useful. With or without the juice, the liquid can be used in baking (I use it without the juice) as a near identical substitute to cow's milk. I also find the non-juice version will make up a very satisfactory white sauce or creamy gravy.You will have to adjust seasonings; you may want to taste as you go along.
For me, this was a WHOLE lot easier, cheaper, faster, and better tasting than keeping the shelf stable stuff around. I made a small amount and used it up. It doesn't have to be a hassle of helf-stable boxes taking up space, money and with the unused portion going to waste.
